Hardhead Catfish are so abundant and hardly ever consumed, as they are considered poor table fare. They are unregulated in the State of Florida. I show you how to fillet these catfish as well. I set out to turn this so called trash fish into a tasty Fried Catfish Po' Boy Sandwich with homemade remoulade and tartar sauce!
