Here is part 1 of going offshore with heritage excursions in Panama City, Florida. Our goal was to load up on Gray triggerfish and vermillion snapper. We used a combination of slow pitch vertical jigging and fishing bait on the bottom. Triggerfish have tough leather like skin, that resembles armor. This gives them a bad reputation, but under that thick skin is delicious and flaky fillets. You gotta try this pan baked triggerfish recipe at home, with an arugula salad and eggplant bruschetta!
