🎣 Catch Clean Cook: TOXIC Barracuda! 🍽️
Join us on our offshore fishing adventure where we successfully catch, fillet, and cook a barracuda—a fish known for its toxicity due to reef-dwelling algae, dinoflagellates. To lower your risk of ingesting the dangerous neurotoxin, ciguatera toxin, from these toothy reef-dwelling fish, it's crucial to target small barracudas caught offshore and away from the reef.
Finding an offshore, small barracuda isn't always easy, so when we finally caught one, we seized the opportunity to film a Catch Clean Cook episode. We were also excited to recreate the recipe from Flo's Restaurant in the Bahamas, where Amanda savored the local Crack Conch Cuda!
Flo's Cracked Conch Cuda:
Ingredients:
Fish fillet of choice
2 eggs beaten
1/2 cup evaporated milk
1/2 tsp salt
1/4 tsp pepper
1/2 cup flour
Oil for frying
Instructions:
1. Mix together eggs, evaporated milk, salt and pepper.
2. Dip your fish fillet in egg mixture, then flour before cooking fish in oil at medium high heat
3. Cook until light and golden brown (around 2 minutes per side)!
4. When taking the fish out of the oil, place it on a paper towel lined plate to absorb excess oil.
5. Squeeze fresh lime and enjoy!
